Southwestern Chicken Stir Fry

 

Serves 2

 

Ingredients

 

3 Tbsp olive oil

1 red bell pepper, cut into strips

1 yellow bell pepper, cut into strips

1 cup mushrooms, sliced

1 cup onion, diced

6-oz package Louis Rich Southwestern Chicken Strips

 

Procedure

 

Stir fry the vegetables in the olive oil over medium heat until they are soft and the onion is translucent.  Some people like to stir fry the vegetables until they are charred.

 

Add the chicken strips and stir fry until they are hot, but don’t overcook them.  Serve immediately.

 

Notes

 

Experiment with different vegetables – it will still be delicious.  I’ve just listed these to give you an idea of the volume of vegetables to use.
